Mexican food is everything to me. I could honestly eat it 5 times a week and be totally content. One of my favorite dishes is just some good ole' chips and guac! I have been making this guacamole since college and it is always a crowd pleaser. We do Taco Tuesday every week in our house, so it's important to have some staple recipes that are quick, easy and versatile!

Ingredients:
3 large, ripe avocados, pitted
1 medium roma tomato, diced
1/2 cup red onion, diced
2 tbsp fresh-squeezed lime juice
salt + pepper to taste
Directions:
Mash the avocado half way so it is still pretty chunky in a medium sized bowl
Stir in the tomato, red onion, lime juice and s + p
Serve with tortilla chips, as a taco topping or for some extra flavor in a salad
Tips:
I sometimes top with cilantro, Cholula or garlic powder
Guacamole is best when it's a little chunky still, try not to mash it all the way out when mixing altogether
To keep it fresh overnight, add extra lime juice as it keeps the avocado from going brown
