My Easy, Go-To Guacamole

Mexican food is everything to me. I could honestly eat it 5 times a week and be totally content. One of my favorite dishes is just some good ole' chips and guac! I have been making this guacamole since college and it is always a crowd pleaser. We do Taco Tuesday every week in our house, so it's important to have some staple recipes that are quick, easy and versatile!

Ingredients:

  • 3 large, ripe avocados, pitted

  • 1 medium roma tomato, diced

  • 1/2 cup red onion, diced

  • 2 tbsp fresh-squeezed lime juice

  • salt + pepper to taste

Directions:

  • Mash the avocado half way so it is still pretty chunky in a medium sized bowl

  • Stir in the tomato, red onion, lime juice and s + p

  • Serve with tortilla chips, as a taco topping or for some extra flavor in a salad

Tips:

  • I sometimes top with cilantro, Cholula or garlic powder

  • Guacamole is best when it's a little chunky still, try not to mash it all the way out when mixing altogether

  • To keep it fresh overnight, add extra lime juice as it keeps the avocado from going brown
